This tea is made from the very youngest leaves and buds of the tea plant. Within 48 hours after the plant develops its first buds, the farmer must begin harvesting. The plants are so young that the green is still covered with a kind of white fur; hence the name. So the buds and leaves are harvested early in the spring and then dried in the sunlight. Because the harvesting process is such a precision job, this tea is considered an exclusive type of tea.
Although white tea comes from the same tea plant as 'regular' black tea, it contains virtually no caffeine. You can therefore drink it with confidence in the evening or give it to your children. In addition, white tea is rich in antioxidants, fluoride and vitamin C. This makes it good for your resistance, strengthens bones and teeth and promotes cell renewal.
Another advantage: no matter how long you leave the tea leaves in the water, the tea will not become dark or bitter. That is what happens when you pour boiling water over it. So don't do it! 75 to 80 degrees is perfect. After about five minutes of infusion, your tea is ready. The taste of white tea is subtle: mild, flowery and slightly sweet.
